MEDITERRANEAN SALAD WITH CHERRIES, BLACK OLIVES, MOZZARELLA AND BASIL

Taking advantage of the good weather, we propose a light dish full of nutrients, and of course with black olives, try this salad with our Kalamón de La Sota olive.

Ingredients:

Mix of curly endive and lamb's lettuce
12 red and yellow cherry tomatoes
80gr. pitted arbequina olives
¼ red onion
10 black olives
fresh mozzarella

Dressing ingredients:

3 tbsp. Of olive oil.
1 tbsp. of vinegar.
Salt
6 large fresh basil leaves

Preparation:

In a small bowl, mix the oil, salt and vinegar until emulsified.
Chop the basil and add it to the vinaigrette. We left it macerating for half an hour.
Cut the purple onion in juliana. With a ball scoop, we take out little mozzarella balls.
In a large bowl, mix all the ingredients.
Emulsify the vinaigrette again and add it to the salad, mixing well
