MEDITERRANEAN SALAD WITH CHERRYS, BLACK OLIVES, MOZZARELLA AND BASIL.

 

Now that the good weather is here, we recommend you a light and nutrient rich dish, which obviously contains black olives. Try this salad with our La Sota’s Kalamón olives.

 

Ingredients:

  •  Curly escarole and canons mix.
  • Curly escarole and canons mix.
  • 12 red and yellow cherry tomatoes.
  • 80g of arbequina pitted olives.
  • ¼ red onion.
  • 10 black olives.
  • Fresh mozzarella.

Dressing ingredients:

  • 3 tablespoons of olive oil
  • 1 tablespoon of vinegar
  • Salt
  • 6 big fresh basil leaves.

 

Preparation:

  1. In a small bowl we mix the oil, the salt and the vinegar.
  2. We cut the basil and we add it to the mix. We leave it marinating for half an hour.
  3. We cut the red onion into julienne strips. We make mozzarella balls using a melon baller.
  4. We emulsify the dressing again and we add it to the salad, mixing it well.
